A liter of bright, dry white from one of Spain's most wildly beautiful corners. Azul y Garanza farm in and around the Bardenas Reales, the lunar desert-park of southern Navarra, and they do everything organically by necessity as much as conviction. This Viura comes from older vines on clay-limestone soils at around 400 meters, fermented with wild yeasts in concrete and held briefly in stainless before bottling. The result is unfussy and refreshing, the kind of wine you pour without thinking about it. The full liter format only makes it easier.
