Stephaneâs highest end crĂ©mant, this is 55% Chardonnay, 35% Pinot Noir and 5% each Trousseau and Poulsard, produced in the Champagne method. The farming is biodynamic, and the cuvĂ©e is produced using indigenous yeasts, fortified with a bit of vin de paille. No dosage nor sulfur is added. The wine is rich with notes of toasted brioche, brown butter and lemon zest; it's perfect as an aperitif but is bold enough to stand up to a meal.
