Rossino is Cantina Furlani's lightly sparkling red, made from 100% Schiava grown high in the Trentino Dolomites by fourth-generation grower Matteo Furlani. The grapes get a short maceration of four to five days, ferment primarily in stainless, then go through a secondary fermentation in bottle using frozen must saved from harvest. There is no disgorgement, no filtration, no added sulfur. What you get is the kind of light, frothy, slightly hazy red that Trentino does better than anywhere: drinkable like crazy, with a savory edge that keeps it from feeling simple.
