Les Chaumees sits at the top of Chassagne, on the high, stony, limestone-rich slopes near the village's old quarry. Where Cailleret is all linear precision, Chaumees tends to wear its aromatics on its sleeve — more openly floral and perfumed, with anise, white blossom, and orchard fruit out front. Caroline Morey, who launched her own label in 2014 after her father's retirement, farms 45+ year-old vines here and uses the same patient approach as her husband Pierre-Yves Colin: 350L barrels, indigenous yeasts, no battonage, unfined and unfiltered. The result is succulent and round but tension-filled, with palate-staining intensity and a great line of acidity.
