Champ Divin farms five hectares on Jura's premier plateau, certified Demeter since 2011, and their Côtes du Jura Chardonnay is made in the ouillé style - barrels are topped up throughout aging, so no flor develops and no oxidative character creeps in. Native yeasts, light sulfur, gentle press.
