The Castéja-owned Pauillac Fifth Growth has long been the quiet, classical Pauillac in the family - dependable, structured, never flashy - and 2005 was one of the great Left Bank vintages of the decade, with the density and tannic spine to reward this kind of patience. Two decades have softened the wine into cedar, tobacco, and dried cassis territory while the core of Pauillac graphite stays firmly in place. This is what mature, traditional Pauillac tastes like when you don't rush it.
