Les Polissons ("the rascals") is named for Benoît Aymard's kids, and it's the loosest, friendliest wine at Clos d'Audhuy — the bottle to grab when you want Cahors without thinking too hard about it. 100% Malbec from the organic, biodynamic estate in Lacapelle-Cabanac, vinified with short, gentle maceration at cool temperatures and aged briefly in stainless before early bottling. The point is freshness and fruit: jammy dark berries, licorice, a velvety mouthfeel, and tannins that have been sanded down to almost nothing. A glouglou Cahors, basically. Chill it down 15 minutes if you want.
