Founded by Laurent Vaille with his brother Bernard, and now made by Bernard following Laurent's death in 2021, the estate famously refuses AOC status, defiantly labeling everything as Vin de Pays de l'Herault. The red is a tiny-production blend of Syrah, Mourvedre, and Cabernet Sauvignon, with a splash of Counoise, drawn from limestone-and-clay scree slopes in Aniane. Aged about twenty-four months in used French oak barriques, it shows the structure and savory depth of a great Bandol crossed with the polish of a top Bordeaux. Grab it while you can.
