David and Naïma Didon established their micro-domaine in Bouzeron using pure biodynamic farming across just 2 hectares. Their 2022 Bourgogne Pinot Noir showcases whole-cluster fermentation with indigenous yeasts and 10-month aging in barrel. The wine opens with delicate florals that marry with red and black fruit, while finely-etched tannins frame cherry, wild raspberry, pepper, and subtle earth.
