NOTES FROM THE IMPORTER:
"Even if Guillaume Sergent was born in a line of champagne makers traced back to 1842, he is not following in anybodyâs footsteps. He has carved out just over 3 acres of the familyâs 9ha in Vrigny and makes Champagne like a Bourguignon: never blending Chardonnay and Pinots nor harvest years, aging in five demi-muids for an entire year, plus one year âsur latteâ with a minimum dosage then disgorged and released. The end result is two aromatic wines with laser beam intensity. Occasionally available, a CĂŽteaux Champenois âClos des Croixâ formerly a rose garden planted by Guillaume in 2014, âPataphysique single vineyard of Pinot Meunier old vines from Vrigny left as Brut Nature and the rare Bouteilles OubliĂ©es (B.O.) which is a PrĂ©-Dieu kept for 6 years before disgorgment."
"Guillaume is a firm believer in the use of wood for his fermentations, but he does not like to raise any of his wines in wood post primary fermentations. All of the wine goes through malolactic before being bottled, typically in January following harvest, and the wines are never filtered, fined or cold stabilized. Guillaumeâs use of SO2 is quite low, and typically only takes place once, during pressing. Generally the SO2 levels are around 45 ppm total, or less. All riddling is done by hand for both of his cuvĂ©es."
